Ice Skating at Irvine Spectrum

Looking for something a little different to do? Why not head on over to the Irvine Spectrum for a little shopping, food & ice skating? Yep, you read that right. Right now, the Irvine Spectrum has an outdoor ice skating rink located in their Giant Wheel Court... perfect for a little holiday fun!

The ice rink will be open nearly every day, now through Monday, January 18th, 2010. Skate sessions are one hour long. The price for adults & children is $11 with a $4.50 skate rental.

That's right, if you haven't heard the buzz yet, the Farrell's Ice Cream Parlour & Restaurant that you remember from your childhood, is opening today! Located at the Shops at Mission Viejo, right across from PF Chang's. Farrell's offers full-service dining, a HUGE candy area filled with specialty, hard-to-find & old-fashioned candies, lots of fun & of course - lots of ice cream. Employees wearing pin-striped vests, ties & cane hats, the banging of the Farrell's drum, the siren whirling, & the whistle blowing, even the Zoo (a ginormous dessert with over 40 scoops of ice cream) has made it's return... everything that you remember from your childhood, only better. I can't wait to do a little "time warp," kids in tow.

Secret Ingredient, Crock Pot BBQ Beef Sandwiches

image of rootbeerThis is one of my favorite "fix it & forget it" meals...

Secret Ingredient, Crock Pot BBQ Beef Sandwiches

Ingredients:
1 Chuck Roast
Root beer (the secret ingredient)
a couple of spoonfuls of brown sugar

BBQ Sauce Ingredients:
1/2 c. ketchup
4 tb. chili sauce
2 tb. brown sugar
2 tb. butter
2 tb. chopped onion
4 tb. mustard
2 tsp. Worcestershire sauce
Or, you can use your favorite bottled BBQ sauce to make the recipe even easier!

Directions:
Put roast in crock pot & pour enough Root beer on top to cover the entire roast. Then spoon a couple of spoonfuls of brown sugar on top. Cook on low heat all day, for at least 10 hours. (When i made it i cooked it on high for about 3 hours, and low for about 7 hours.) When finished drain & shred with a fork. Boil all the sauce ingredients together & pour over meat. (Or, if you don't want to whip up the home made BBQ sauce, just use your favorite bottled brand.) Serve with french rolls for a sandwich or all by itself for a yummy meal!
